Let’s make it

Amounts below match your selected batch. Follow each short step, and use timers as reminders to check the food.

Equipment

Kitchen scale · Knife · Cutting board · Measuring jug · Large skillet with lid · Saucepan with lid · Instant-read food thermometer

  1. 1

    Prepare the cold sauce first

Wash the produce and use a clean board. Mix 200 g plain yogurt and 240 g finely diced cucumber. Refrigerate. Prepare 60 g peeled, seeded lemon flesh with its juices, mince 8 g garlic and set aside separately. Keep these ready-to-eat ingredients away from raw fish.

  2. 2

    Cook the potatoes and beans

Place 800 g (about 4 medium potatoes, skin on) skin-on potato cubes in a saucepan with 1,500 ml water, adding a little more drinking water if necessary to cover. Bring to a boil and simmer 4–6 minutes. Cut 400 g green beans into short lengths and add them. Simmer 5–7 minutes more, until potatoes and beans are tender, then drain well. Start checking the small potato cubes early so they stay tender without falling apart.

  3. 3

    Handle the fish safely

While the vegetables cook, keep 600 g salmon chilled until the pan is ready. Check for pin bones and remove them with clean tweezers. Pat dry; do not rinse fish. Season with 1 g salt and 1 g dried oregano. Wash hands and equipment that touched raw fish.

  4. 4

    Sear and check each portion

Heat 16 g olive oil in a wide nonstick skillet over medium heat. Add salmon in a single layer, skin side down if present. Cook about 4–6 minutes, turn gently and cook 3–6 minutes more, reducing heat if needed. Timing depends on thickness: check each portion reaches 145°F / 63°C in the thickest part using a clean thermometer. Use batches or a second pan for more portions, dividing the measured oil. Move cooked fish to a clean plate.

  5. 5

    Dress the warm vegetables

Lower the pan heat. Add 12 g oil and minced garlic; stir for about 30 seconds without browning. Add drained potatoes and green beans, lemon flesh and juices, 1 g oregano and 1 g salt. Toss gently for 1–2 minutes until coated and hot. Use the vegetables to collect the pan juices.

  6. 6

    Serve with cucumber yogurt

Divide salmon and warm vegetables among the selected portions. Add the cold cucumber yogurt alongside. Check again for bones while flaking a child’s serving, and keep the cold sauce separate from leftovers.

Make it work for you

For kids & different preferences

Flake cooked salmon finely and check carefully for every bone. Mash potato and cut soft beans into small pieces; peel or soften cucumber if needed. Check fish and milk allergens. Seat young children upright and supervise eating. This is family food, not infant-feeding guidance.

Storage & packed lunches

Refrigerate in shallow covered containers at 40°F / 4°C or colder within 2 hours, or within 1 hour above 90°F / 32°C. Use within 3 days. Pack cold with ice packs when taking along.

Freezing & reheating

Freeze fish and vegetables separately for up to 1 month for quality. Potatoes may become softer. Add fresh cucumber yogurt after reheating.

Reheat cooked leftovers to 165°F / 74°C throughout, stirring and checking several places. Keep uncooked accompaniments separate.

If something looks different

Cooking times are guides. Check texture and temperature; larger batches need extra pan space and may take longer.
