Chickpea & spinach couscous-stuffed tomatoes
Soft roasted tomatoes hold a moist tomato-simmered filling of chickpeas, spinach and couscous, seasoned with lemon and ground cumin. Extra filling bakes around the tomatoes so no pulp or flavorful juices are lost.

How these estimates work
Per portion and for your whole batch. These are ingredient-based estimates, not laboratory-tested nutrition facts. Optional ingredients are excluded.
Estimated nutrition uses raw, dry and drained weights, assumes all oil is eaten, and retains reference-food proxies and ranges. Actual brands, trimming and cooking losses vary. This is not laboratory analysis or a medical recommendation.
USDA FoodData Central references. Brands, food varieties, preparation and portion size change the result. Added sugars assume plain, unsweetened ingredients; for prepared breads and sauces, a range shows zero to the reference food’s total sugar because the added amount is unspecified.
Ingredients, sources & assumptions
All listed edible food and oil are counted as eaten. Cooking losses and final cooked weight are not measured. Some ingredients use a stated reference food or a proxy for a missing nutrient. No personalized dietary advice.
Tomatoes, red, ripe, raw, year round average · 1600 g in the original batch
USDA food referenceChickpeas (garbanzo beans, bengal gram), canned, sodium added, drained and rinsed · 480 g in the original batch
Missing sugar and cholesterol use the USDA SR drained/rinsed chickpea reference. Missing saturated fat uses that reference’s saturated-to-total-fat ratio applied to the primary total fat.
USDA food reference USDA supplementary referenceCouscous, dry · 160 g in the original batch
Missing dry couscous sugar is estimated from USDA cooked couscous: one ounce dry yields 86 g cooked. Other nutrients use the dry reference.

Let’s make it
Steps at a glance 6 steps
Amounts below match your selected batch. Follow each short step, and use timers as reminders to check the food.
Equipment
Kitchen scale · Knife · Cutting board · Spoon · Bowl · Saucepan with lid · Wide skillet · Baking dish · Foil · Oven
- 1
Hollow the tomatoes
Heat the oven to 375°F / 190°C. Wash the whole tomatoes, remove stems and hard cores, then weigh 1,600 g trimmed tomatoes. Slice off lids and scoop the soft pulp into a bowl, leaving sturdy walls. Keep the lids. Chop all retained pulp and keep its juices; do not discard edible flesh. Set shells upright in a snug baking dish. Choose four very large beefsteak tomatoes or about eight large tomatoes for the base batch; weighed edible mass controls the recipe, not the count.
- 2
Hydrate the couscous
Bring 200 ml water to a boil. Stir in 160 g instant couscous, cover and remove from heat for 5 minutes or follow the package absorption instructions. If the package requires more water, add it. Fluff with a fork. Do not substitute large pearl couscous without changing the cooking method.
- 3
Cook the vegetable filling
Heat 24 g olive oil in a wide skillet. Cook 120 g chopped onion over medium heat for 5 minutes. Add 8 g garlic and 3 g cumin for 30 seconds, then the reserved tomato pulp and juices. Simmer 8–12 minutes until thick enough to leave a brief trail when stirred. Add 160 g washed, chopped spinach and 480 g drained chickpeas; cook 3–4 minutes until spinach wilts and beans are hot. Start the tomato-pulp timer only after adding the pulp; the onion and final spinach stages have their own stated cooking times.
- 4
Fill and bake
Mix the cooked couscous into the hot filling with 40 g finely chopped lemon flesh and juice and 1.5 g salt. Spoon into tomato shells without packing tightly. Spread any extra filling around them and rest the lids alongside. Cover loosely with foil and bake for 20 minutes. Start this step’s timer when the dish enters the oven.
- 5
Uncover and finish baking
Remove the foil carefully. Bake for another 10–15 minutes until tomato walls are tender and the filling is steaming throughout. Start this separate timer only after uncovering; check sooner for smaller tomatoes.
- 6
Serve the complete lunch
Let stand for 5 minutes. Divide the tomatoes and all extra filling equally among the selected portions. The stuffed tomato and its surrounding chickpea-couscous filling together form the meal; use more baking dishes for larger batches instead of crowding one dish.

Make it work for you
For kids & different preferences
Adult supervision is needed for knives, hot pans and the oven. For eating, mash chickpeas, remove tough tomato skin, chop spinach finely and cool the filling; adjust texture for the child. Seat children upright and supervise. Wheat is present in couscous. This is family food, not infant-feeding guidance.
Storage & packed lunches
Refrigerate in shallow covered containers at 40°F / 4°C or colder within 2 hours, or within 1 hour above 90°F / 32°C. Use within 3 days. Pack cold with ice packs when taking along.
Freezing & reheating
Freeze cooked components separately for up to 1 month for quality. Thaw in the refrigerator; add uncooked accompaniments fresh.
Reheat cooked leftovers to 165°F / 74°C throughout, stirring and checking several places. Keep uncooked accompaniments separate.
If something looks different
Cooking times are guides. Check texture and temperature; larger batches need extra pan space and may take longer.
